Assistant overide center?

Is it common for an assistant to overide a center for fouls? Also if a keeper gets hurt with 1 minute left in the game, and the center calls the coach out . Does the keeper have to leave the game if he is okay to play? And no he was not knocked out or hit on the head, just a 50/50 with cleats going into him after he had control of the ball.
 
Club soccer - IFAB LOTG (Law 5) instructs the Referee that an injured keeper is not required to leave the field if attended to on the field.

HS soccer - HS Rules require the keeper to leave the field and be replaced if attended to on the field or if the Referee beckons a coach/trainer to enter the field. The keeper can return at the next substitution opportunity.

Not sure exactly what you mean by "override a center for fouls." Assistant Referees (AR) operate under the direction of the Referee. They may assist the Referee with regard to offenses they observe but the final decision will be taken by the Referee. If play has been stopped It may be appropriate for a Referee to seek information from the AR before the making a final decision. The final decision may be in line with the information from the AR rather than the Referee's first impression. Note also that ARs can be dismissed by the Referee for undue influence or improper conduct.

Yes, and since a goalkeeper is a required player, a new properly-attired keeper must take their place; either coming on as a substitute for a current field player or a field player donning a distinguishing kit. The clock is stopped for a caution so the delay while a field player changes shirts is not lost.

Thanks. Often gk cautions are for delay. Seems counterproductive to then have a long delay for the sub. Even though the clock stops, it's still a momentum killer.
